Bubble and Squeak - for the freezer?

 Way way back in 2020 I wrote about Bubble and Squeak and all the variations I have tried over the years.  It was (and still is) something that we make to stretch the pennies when we need to. Some things never change....however some things do in that now I cook it differently.

For those that don't know Bubble and Squeak is mashed potato and cooked cabbage at it's simplest and is cooked in a frying pan or skillet.  For a large family that means multiple batches and standing at the stove for a while.  I had enough of that (and also wanted to stock my freezer with bulk meals) so here is what I do these days.

Mashed potato (made with butter), browned fried onion, steamed cabbage - mix together and pack into a metal (and yes it should be metal or enamel) roasting tin, top with grated cheese if desired and bake in a hot oven for about half an hour.  Cut into squares to serve.

No more wasting time standing at the stove, bonus is that you can wrap portions and freeze for a couple of months.  Defrost overnight in the fridge and then microwave until hot in the centre.
